PRESSURE COOKER RECIPE

INGREDIENTS

  • 2 racks of pork baby back ribs (about 3 lbs each)

  • Ani™ Baby Back Ribs Spice Pack

  • 1 cup apple cider (or water)

  • 1 tsp liquid smoke (optional)

  • BBQ Sauce (optional)

DIRECTIONS

  1. Remove the back membrane from the rib racks and trim off any excess fat.

  2. Rub the ribs with the Ani™ Baby Back Ribs Spice Pack, putting more of the rub on the meat side of the racks, but be sure to have some be on the back (bone) side as well.

  3. Let the rib racks rest at room temperature for 30 minutes (if possible).

  4. Place the trivet that came with your pressure cooker inside.

  5. Pour in the apple cider (or water) and liquid smoke (if using) into the pressure cooker.

  6. Stand up the rib racks on their sides on top of the trivet in two interlocking “C’s” with the meat sides facing out. (To keep the rib racks from touching, you may need to use a few toothpicks to create some space in between the racks.)

  7. Cover the pressure cooker and set the steam release to Sealing. Cook on high pressure for 22 minutes. Allow for a 5 minute natural pressure release.

  8. While the ribs are cooking, turn on your oven's broiler to high. Line a baking sheet with foil.

  9. After the 5 minute natural pressure release, release the pressure, remove the lid, and place the rib racks, bone side down, on the baking sheet.

  10. Brush the meat side of the rib racks with a thin layer of BBQ sauce (if using).

  11. Broil for 3–5 minutes (don’t let them burn!) until the racks are nicely browned.

  12. Slice into individual ribs and serve.
