PRESSURE COOKER RECIPE

INGREDIENTS

  • 4 lbs beef chuck roast, excess fat trimmed and cut into 4 large pieces

  • Ani™ Spiced Pot Roast Spice Pack

  • 1 can diced tomatoes, 14 1/2 oz

  • 1 cup beef broth

  • 1/4 cup red wine vinegar

  • 2 tbsp tomato paste

  • 2 cloves garlic, minced

  • 1 medium onion, chopped

  • 1 ½ lbs baby potatoes (red, gold, white, or a mix of all these), washed

  • 1 lb baby carrots

  • Cooked egg noodles or cooked white rice – for serving (optional)

DIRECTIONS

  1. Add the diced tomatoes, beef broth, Ani™ Spiced Pot Roast Spice Pack, red wine vinegar, tomato paste, garlic, and onion to the pressure cooker. Stir to combine.

  2. Add the beef pieces and submerge as completely as possible.

  3. Layer the potatoes and then carrots on top of the beef. They shouldn't be submerged, so they can be steam cooked while the pot roast cooks.

  4. Cover the pressure cooker and set the steam release to Sealing. Cook on high pressure for 45 minutes. When completed, allow for a 10 minute natural pressure release.

  5. Release the pressure, remove the lid, and remove the pot roast pieces.

  6. Slice the pot roast against the grain. Serve while hot on pasta or rice (if desired) with the potatoes, carrots and juices from the pot.


SLOW COOKER RECIPE

INGREDIENTS

  • 4 lbs beef chuck roast, excess fat trimmed and cut into 4 large pieces

  • Ani™ Spiced Pot Roast Spice Pack

  • 1 can diced tomatoes, 14 1/2 oz

  • 1 cup beef broth

  • 1/4 cup red wine vinegar

  • 2 tbsp tomato paste

  • 2 cloves garlic, minced

  • 1 medium onion, chopped

  • 1 ½ lbs baby potatoes (red, gold, white, or a mix of all these), washed

  • 1 lb baby carrots

  • Cooked egg noodles or cooked white rice – for serving (optional)

DIRECTIONS

  1. Cut the beef roast into 4 equal-sized pieces, trimming off any excess fat.

  2. Add the tomatoes, beef broth, red wine vinegar, tomato paste, garlic, onion, and Ani™ Spiced Pot Roast Spice Pack to the slow cooker. Stir to combine.

  3. Add the beef pieces into the liquid in the cooker, and submerge as completely as possible.

  4. Top with the potatoes and carrots – it’s fine if they’re not fully submerged, just tuck in as best you can.

  5. Cook on low for 5-6 hours until the meat and vegetables are nice and tender.

  6. Slice pot roast across the grain, and serve hot on pasta or rice (if desired) with the potatoes, carrots and juices from the pot.
